Sambar Vada is pure comfort in a bowl. We start with our hand-made medu vada, then immerse them in a generous ladle of hot sambar, a tangy lentil and vegetable stew spiced with tamarind and South Indian masala.
As the vada soak up the sambar they turn soft and flavourful while keeping a little of their bite. Topped with fresh coconut chutney, it is a warming, satisfying dish that Calgary NE regulars turn to again and again.
